I want to be able to save continuous voltage measurements over a period of 1 hour but am having a hard time finding a way to change the capture settings. Currently, when I choose save/recall and save the data measured at 1s, the waveform is captured for ~10s. How would I change this so the waveform is captured for larger periods of time and is able to be saved as a CSV file?

Can you share what scope you are using - there may be some features that would allow you to do this. Second question is do you just need the voltage measurement results? or do you need to see the waveshape too?

I am using the TDS 2001C 50MHz Two Channel Digital Storage Oscilloscope. As long as I can redcord the time and voltage I can plot the waveshape later as I am measuring from a PCB using a probe.

One hour is quite a long acquisition for a scope. This is the kind of measurement that is usually best done by a digital multimeter.
There is also a question of the sample rate you need this acquisition to be done at, which you did not specify.

I would suggest using TekScope Utility (https://forum.tek.com/viewtopic.php?t=140451) and using its Data Logger feature to record several waveforms that add up to one hour of acquisitions.
